Never thought of making shepherd's pie with turkey. I make an Americanized version of it with hamburg every once in a while. I make turkey soup (aka skeleton juice) with the carcass. After I take off most of the meat, I put the bones and skin in a pot of water, with some onion, carrots, celery, and whatever seasonings I happen to feel like throwing in. Let it simmer for a few hours to make stock, then strain the stock and toss the solids. Then put whatever you like into the stock to make the soup - it's never the same from one year to the next. Diced turkey, vegetables, rice or noodles, whatever makes you happy.
What leftovers??? :mrgreen: J/K............I've still got ham, turkey, dressing, the works. No cooking today!

First one: Simmer shredded turkey with chipotle pepper sauce for 1-1/2 hours on low. Then wrap it in tortillas with peppers and onions. Lightly fry and top with sour cream and guacamole for turkey chimichangas. Second one: Kentucky hot browns: over slices of toast, place pieces of turkey, slice of tomato, white gravy (butter, flour, salt, pepper, milk), slices of crispy turkey, and shredded cheddar cheese. Put under broiler until cheese is bubbling.
Turkey Pot Pie about 2 cups cooked, cubed turkey 2 cans cream of chicken soup (I use the Healthy Request /low fat) 1 bag (16 oz.) frozen mixed veggies right from the freezer (peas & carrots or corn/peas/carrots/green beans) 2 deep dish pie shells ================== Put chicken, soup and veggies in pot. Heat until ingredients are warm. Pour into one deep dish shell. Cover with the other shell. Put a few small vent holes. Bake according to pie shell directions. ================= This is easy to make and yummy! Lately, to cut down on fat & calories, I omit the pie shell. Instead I scoop the filling into a bowl (from pot once hot) and it still tastes great.
Interesting! I know authentic shepherd's pie is made with lamb, that's why I referred to mine as an Americanized version, but I didn't know the ground beef version had its own name. From now on, I shall call it cottage pie.
I was pleasantly surprised when my mom had sliced beef and gravy for our Thanksgiving meal. I am so tired of Turkey. Dry tasteless meat. Gimme beef!!!
