FETTUCINE ALFREDO

    I am looking for a place that serves good Fettucine Alfredo. I know you can get it at most italian places but I am craving some GREAT alfredo. Nice creamy and cheesy sauce and some good pasta. Any suggestions?

    Ken is right. One of the easiest pasta dishes to make yourself. Here is a good recipe:


    1 (12 ounce) package egg fettuccine
    2 tablespoons butter
    1 to 1 1/4 cups half-and-half
    1 cup (3 healthy handfuls) grated Parmigiano-Reggiano
    2 pinches ground nutmeg or about 1/4 teaspoon freshly grated nutmeg
    Coarse ground black pepper
    A pinch coarse salt

    Bring salted water to a rolling boil for the pasta and cook to package directions for al dente pasta.
    Preheat a large skillet over moderate heat. Drain the pasta. Add the butter to the pan and melt. Add half-and-half to the melted butter. Stirring constantly, add cheese and cook sauce 1 minute. Season with nutmeg, pepper, and a pinch of salt. Turn off heat under sauce and add pasta to the skillet. Toss pasta until sauce coats the noodles evenly. Mangia

    I just started making it with the egg fettuccine noodles. It made a big difference. You have to use good cheese too. No kraft cheese in the can. :)

    Here's my easy recipe:

    1 C heavy whipping cream
    1 stick butter
    1/2 C freshly grated parmesan cheese
    Salt to taste

    Heat cream, butter, salt and cheese in pot until butter is melted. Pour over cooked fettuccine.

    Too easy!!!

    (That spinach, snow crab and tomato sounds GOOD!)
     
  8. If you do want to have someone make it for you I would suggest San Remos off 1010 and kildaire Farm Rd. They have some of the best food and its all family run.

    I ate there once for lunch years ago and it was really good! I never go that direction, otherwise I'd eat there more often.

    Thank you all. I actually have a really great recipe for Alfredo. That being said, my birthday is coming up and DH was asking what I feel like for dinner. I have been craving the alfredo but I also want to go out for my bday. I thought I could find a good place to go to. Otherwise I will just make it myself and find another restuarant to go out to.

    I really love my alfredo with spinich and shrimp.

    That's how my family cooks and it drives me insane. Now that my grandmothers have died I do not have there recipes. With my mother's Alzheimer's she has forgotten how to make her chestnut dressing, potato salad and many other things. It makes me sad. I try but it is just not the same. Guess that's why we eat out alot (right!).

    Write down the recipe even if you put down to add a dash of this or that because your kids will want them some day.

    Ken, you and I need to have a cook-off. First you go and post my fettucine alfredo recipe, what's next my linguine with clam sauce recipe? And I too use the word "recipe" lightly, I know what goes in, sometimes the amounts vary, and sometimes additions or subsititutions are made. But it always comes out good!
