I was just thinking that sounded tasty, how about sauteing/grilling to al dente and then putting on the torilla with cheese and whatnot? Roll it up?
Ok Now, a question from the cooking clueless. How does one make a quesadilla anyway? I have some corn tortillas and Mexican blend shredded cheese in my fridge and I need to use them up.

Necessity is the mother of invention. Sometimes you just don't feel like going to the store. I have some squash in my garden right now, but we just had tacos last night. I think I wil saute mine with some chicken and southwest seasoning. Maybe throw in some yellow rice - my own verson of Chicken Voila!
Oh, in an hour or so. Have to go pick the squash and kick the soccerball around. I guess the rain is not coming. I put my umbrella down and it still blew over.
If you cook the chicken separate and only half way cook the veggies it will great!!! I make these all the time and put cheese and tomatoes inside also.
Probably should have mentioned I didn't have any chicken... lol Sorry for the confusion. But that's how I usually do it.
Then let me rephrase....I cook it WITH chicken for hubby and the boys. Mine are only veggies....AND THEY ARE DELISH!!!!
What veggies do you use? I find I'm growing tired of meat. My usual veggies are just peppers and onions with the occasional tomato......and cheeeeeeese!
Zuc & squash are a must! I also saute' them with red peppers & onions. Only cook them 1/2 so they are still crisp. Once I layer them on the one tortilla i put diced tomatoes and the 4 cheese blend.....hmmm, hmmm good!!! Top it with sour cream and you have one awesome dinner!
