Calling all you 4042 chefs . . . I went and picked up my new George Foreman grill at lunch and I am going to grill some chicken tonight. I bought myself a new spice rack this weekend and I have no clue about what to use on which meat. What do you guys recommend for my chicken? I don't like garlic so that one is out and I don't care for rosemary.
Lemon-pepper is great on grilled chicken and fish.. but not sure its standard in most pre-loaded spice racks. An italian seasoning blend would be good for a start, I know I just got a new spice rack and mine has that one on it.
Hmmm, you just have the spices that came with the rack? If you don't like rosemary, then perhaps some thyme? Other than that, salt, pepper, butter? I don't like lemon pepper myself, but don't think that is ususally in a spice rack. If you want to be a little more adventurous, next time you are at the store, pick up some Weber Sween N Tangy BBQ. It's a powder and is delicious.
Another thing to think about... most individual spices aren't so great by themself just sprinkled on something... alot of times they are better when mixed in a marinade or a sauce.
If you have any bottled Italian dressing, I hear that makes an excellent marinade/sauce for grilled chicken. I think I would try that before a plain dry spice.
I wish I could tell you I liked it, but I don't like Italian Dressing and I hate lemon pepper, LOL. I know my sister raves about the Italian dressing though. I know, I know, I'm weird. 8)
some kind of jamaican jerk chicken spice. get the premixed up kind, don't go looking for some recipe for it
In the Hispanic section at FL on 4042, they have some spices for rotisserie chicken. That's what I use for my set it and forget it...and that chicken gets rave reviews...
Adams Rib Rub form Lowe's or Kroger. Actually for chicken I dry rub it with a 50/50 mixture of Adams RR, Spicy and the CharCrust (I think that is it) Hickory rub from Foodlion! I have never had anyone refuse seconds.
