Cheesy Potato Soup 4 cups diced potatoes 1 Onion (fresh or dried works) 1 can Cheddar Cheese Soup 1 can Cream of Celery 2 soup cans milk Extra cheddar cheese if desired (I've used Velveeta too) Bacon to taste Butter to taste Salt & Pepper Boil potatoes and onion together til done, but not mushy. Drain. In same pot, combine soups, milk, cheese, bacon and a pat or two of butter. Warm and stir until completely combined, add your salt and pepper. Add potatoes back in and bring to a simmer. Voila! Potato soup that will rival O'Charley's. Now, if you really wanna make it decadent, when it's in your bowl, add some more bacon bits (only the real ones!) and more cheese as a garnish. I've also used half n half before for some of the milk, and it's really rich and creamy. Obviously, this is not a "healthy" recipe, but it sure is tasty on a cold, rainy day.
It is to me! One of mine and my son's favorites. We had it tonight, while DH is out of town. He's not a big potato soup person. Yeah, I don't know what's wrong with him either. :jester:
We do a version of this as well and is always a hit w/ the kids. If any of you don't want to dice the potatoes, we just use a bag of frozen hashbrowns in it and it tastes teh same. I tried using the frozed diced potatoes in something else the other night...............it didn't go over well, LOL. GRRRR!! I think I've gotten them too spoiled! :?
Don't let me put you off! I am a potato snob. I hate instant of any kind. And they were the store brand and had hung around for a while in the freezer. Probably my own fault they weren't quite up to snuff.
LOL So is DH. He can smell instant potatoes a mile away and wouldn't touch them with a ten foot pole. Are we talking about the same potatoes? THe ones I'm talking about aren't hashbrown taters. I've only seen them in a commercial. I had DH with me last time I went shopping and there was no way I was even going to try to look at them. I'll have to slip them in somewhere when he ain't watching.
They call them "hashbrown" potatoes, but they are in the frozen veggie section, they are just diced potatoes, not shredded ones. I got some Ore Ida Steam and Mash the other day. We'll see how those are. I just can't hack the instant ones. My grandmother actually fixed instant mashed potatoes for Christmas. I about staged a revolt! :lol:

There are some other ones that are already cubed, and not frozen. They are by the eggs at Lowes Foods in Clayton, I think they are called Simply (somthing). They are in a green bag, top shelf to the left. That package has a recipe on the back that looks good for a potato & bacon soup. I was gonna make it a few weeks ago, but then dh used the potatoes for homefries instead and I hadnt bought another package of them yet. (today i's is cookin' corned beef, cabbage and boiled veggies...yumm!)
I use instant potatoes most of the time - its just easier. But I fix mine with milk (low fat) instead of water and coffee creamer (fat free, non flavored) add a little sour cream and butter and my family loves them! They're rich flavored, creamy and yummy! :mrgreen:
OK, so I had the Steam and Mash tonight. Eh, they were OK. The best way I can describe the texture is that they are bit "gritty". Tasted fine, it was the texture to me. So, for the price, I will stick to regular ole time-consuming potatoes.
I am a potatoe snob too....only red for me. My kids, they'll eat either, envelope or fresh. They don't like the boxed 'scallop' kind either....:ack: KDC....my Mom did the instant potatoes at Thanksgiving year before last....my sister and I threatened her life. :mrgreen:
