My Mom used to put olives in it. Come to think of it she called it Egg and Olive salad. I'm pretty sure it have other ingredients too.
Ok - I found out the simplest way is just boiled eggs, mayo and mus-My Friend, salt. I'll try that and see. By the way, didn't we have the chicken salad chat before?! You crazy people don't like crunchy with your soft! :lol:

I add a little pickle relish. Sometimes paprika, sometimes celery salt or garlic powder. However the mood strikes me.
egg salad: EGGS (LOL) spicy mus-My Friend or regular mus-My Friend ( prefer spicy) salad dressing or mayo ( I use a little of both) pickle relish black pepper a dash of paprika (for another added kick) I think of egg salad just like deviled eggs for the most part, 'cept the whites are smushed up in the salad instead of being used as the holder for the deviled eggs. Keep it simple. One of those little egg slicers is nice, but not necessary. Hard boil 6-8-10 ever how many eggs you want. Peel, slice, add enough mayo to hold together, salt and pepper, lots of pepper, preferably fresh ground. Mash with fork. This is how my mother made the best egg salad all of her life. Embellish if you like. I often add garlic, onions, horseradish, relish, etc. Its all a matter of personal preference. 8)
Wife makes the egg salad not me, though I will suck down a couple of egg salad sandwiches with a few beers just to be a man. But when it comes to Chicken salad I love adding sweet relish cubes, celery, and onions to mine. As for salad dressing or mayo......gotta be Dukes. Craig
