So........what do you fix for dinner on weeknights?

    Last night (and leftovers tonight), super easy:

    Boil 3 chicken breasts and shred.
    Mix in small container of Harris Teeter brand pesto (best premade I've found).
    Make a wrap from whole wheat tortillas, shredded lettuce, pesto chicken, grated cheddar, just a little ranch dressing. YUMMY!

    If you had more veggies around, I'd probably insert those and skip the cheese altogether.

    Tonight it is Bisquick's Impossibly Easy Cheesburger Pie with veggies on the side.

    I'm into fast fixin's lately! We got some Honey & Chipoltle(sp) and some Teriyaki salmon from BJs...Toss it in the oven for 20-25 min, throw together a nice salad or some frozen baby yellow and green beans. Don't know right off hand who makes them (it's 2:10am) they are in the freezer section and there are also carrots and cranberries in it, but DH loves them. This.. coming from a man who DOES NOT EAT green beans. LMAO! I don't know what the thought they were but he almost didn't believe me when I told him they were plain ol green beans. There is also a little pat of herbed butter sauce in it. I think they call it Beans With A Twist...

    Another go to quick fix for me is frozen popcorn chicken and oven baked fries. There are two kinds (at Lowes) one is breaded peices of real chicken breast and the other is "all white meat" (ground I guess...minced?) chicken meat (and I don't know what else) shaped into small pieces. I haven't tried it but don't recommend that one. :ack: This is not a low fat meal! lol Use two sheet pans and cook them at the same time. 20 min tops. And, unfortunately for the size of my ***, I've found an ok Zaxby's dipping sauce recipe online. :oops:

    An easy fix for lasagna is using the dry no cook pasta. Just slap on your cheese and sauce layers, bake and you're good to go. No one has complained yet. Throw in some extra sauce and use Cole's Garlic Bread for soppin and dippin'.

    And there is always Red Barron for an east out! :mrgreen:

    When I get off the meds I'll go back to making regular salads. (I can't have vitamin K and it's no fun making a big beautiful salad when you aren't allowed to eat it.)...yup.. a big ol salad with some baked or grilled chicken breast added.... yum.

    Spaghetti is always fast.... I used to make homemade sauce from scratch but DH likes his Mom's better... so Prego it is! I ain't wasting my time on something that I'm the only one who likes. He wasn't raised on "cooked from scratch" food. ...And his parents are from NY...and that's all I'm sayin' 'bout that. :p

    There is meatloaf. You could always make it ahead of time and freeze it (raw or cooked). A friend of mine makes hers in the crockpot. Just fold two long (sturdy) pieces of foil and lay them in an X fashion in the pot. Place the meatloaf on top. And when it's ready lift it out by the foil strips. But I don't remember how long...say 4-5 hours on high? ...I'd use my meat thermometer to be sure.

    Well last night I tool my beautiful wife to an Asian Bistro. I had Hunan chicken, she had sesame chicken. We also had endamama, wonton soup for two, 2 eggarolls...(pronounce like typed) She had wine, I had water.

    Sometimes it is leftovers, sometimes it comes out of somebody's window, & sometimes I do the crockpot thing(check out crockpot365.blogspot.com/.

    Mostly grill Venison & Shrimp kabobs, Chicken or Salmon or Burgers
    Inside, we make spaghetti, linguine and clams, tacos
    We eat ALOT of beans and rice, stuffing or veggies as a side.

    No salads, they always go bad before we can eat them. :?

    Sunday night was grilled boneless, skinnless chicken breast covered with a mango fruit salsa, ontop of a bed of white rice, with broccoli on the side.


    Last night it was Corned beef and cabbage with boiled potatoes, carrots, and onions.


    Tonight will probably be boneless chicken bites from McK's as they are the special of the night.

    Lately, it's been a lot of grilled mahi mahi and shrimp with steamed or roasted or grilled veggies on the side. We did splurge on calories and have steak on the weekend. Almost always red wine.

    Well sometimes I splurge with a pork brain sammish topped with potted meat and sardine mayonaise.


    With a tall glass of yager.

    Tonight we're having subs (make our own) Usually throw some veggies/ranch dressing and/or healthy-type chips and that's an easy night.

    If you want a great place online to find recipes, try kraftfoods.com. You can search healthy, budget-friendly or just type of meal/recipe. You can even type in what you have to work with (like chicken and brocolli) and it will give you ideas. The best part is it's always using ingredients you have around the house, not some off-the-wall ingredient that you have to go to a specialty store to find. My family enjoys the grilled bruschetta chicken and cheeseburger macaroni.

    Another meal I've started making that everyone here seems to like...My kids all like going to the Japanese steakhouses, but we can't afford it very often. So I've started making my own. Just boil some chicken til it's almost done, then cut it up and cook it in some soy sauce (the lower sodium one is best). Make some white rice and I usually keep some white and fry the rest in more soy sauce, and I make mushrooms in some butter and soy sauce as well. (that's why I use the lower-sodium one, so we don't all get high blood pressure from one night's dinner!) My kids will eat more chicken this way than any other way we make it - and we have chicken probably 4 nights a week!
