Thanksgiving Recipes

    Bar-B Que Turkey

    Take a 12-15 lb turkey and cut it in half with a hack saw, actually easier if frozen, but not rock hard (or get them to do it at the grocery store). Place cut side down on 325-350 degree grill, I prefer charcoal, gas will work, for app. 3 hours. Turn over and tear meat open with forks and start laying on and in the bar-b-q sauce. Sauce every 15 minutes or so. Cook for 1 more hour. Remove and pull meat apart, add more sauce and serve.

    If you have an injector, load that turkey up before you put it on the grill. The sauce shouldn't be too thick (like Kraft's) or too thin (like a pig sauce),and is a matter of personal taste, but for a store bought sauce, George's (Mild or Hot, I prefer the Hot) is hard to beat and available at Clayton Food Town by the gallon for $10 and change. I keep a gallon under my counter. I have a recipe that I was given by the man that taught me to cook a turkey on the grill, and I will pass it along if anyone wants it and I can find it. George's is just too easy and too good!

    Finger lickin' good!!! Beats a fried turkey hands down!!! (IMHO) 8)

    Think I will try the sweet potato casserole recipe. Thanks & the grilled turkey sounds yummy.

    Sweet Potato Casserole

    Preheat oven to 350 degrees

    3 cups mashed sweet potatos or yams (I use the canned)
    1 cup evaporated milk
    3/4 cup sugar
    1 stick of butter or margarine (melted)
    2 eggs beaten
    1 tsp. cinnamon

    mix all together, blend/beat till almost smooth. Pour into casserole dish.

    Topping:

    1 cup brown sugar
    1/3 cup of plain flour
    1/2 chopped pecans
    1/2 stick butter or margarine (melted)

    combine ingredients together. Mixture will be soft and crumbly. Sprinkle on top of casserole.

    Bake in oven about 30-40 minutes.

    I have had this recipe since 1992(obtained from a co-worker)....it is the best. If I don't show up with it, I don't think my fam will let me in the door. :mrgreen:

    So basically make a pie without a crust and put a crumble topping on it. Check.

    Pineapple Stuffing

    4 eggs
    3/4 c. sugar
    1 can crushed pineapple with juice
    4 slices bread, broken for stuffing

    Cream eggs and sugar. Break in the bread and toss with pineapple and juice. Bake at 350 degrees for 1 hour in a 3 1/4 to 4 quart casserole. Check brownness at 45 minutes and cover if too brown.

    Good with ham :)

    Sounds kinda like the one I make, but I use Ritz crackers instead of bread! :)

    Apple Dumplings!

    APPLE DUMPLINGS



    2 Granny Smith apples

    2 cans of Crescent Rolls

    2 sticks butter

    1 1/2 cups sugar

    1 tsp. vanilla

    1 can Mt. Dew

    cinnamon - to taste



    Peel and slice each Granny Smith apple into 8 slices. Roll each apple slice into 1 crescent roll - having 16 pieces. Place pieces into a buttered baking dish - Melt butter - add sugar - stir slightly - add vanilla. Pour butter/sugar mixture over apple pieces. Pour Mt. Dew around the outer edges of the apple pieces (I usually use about 3/4 of the can). Sprinkle with cinnamon. Bake 40 minutes at 350 degrees. Serve warm with ice cream.
