This is from recipezaar.com, but a basic recipe that is so delicious. Pan Roasted Asparagus • 1 lb thin asparagus • 1 tablespoon olive oil • 1 clove garlic, finely chopped • 1 teaspoon salt, to taste Directions Trim the bottom inch or two off the asparagus. Cut spears in half crosswise. Heat olive oil in a large heavy skillet. Add asparagus and the garlic and salt. Toss well for one to two minutes. Serve hot or at room temperature. So yummy! But I also like it just steamed and then spray it with spray butter and salt it. -K
I take how ever much asparagus I want to eat and snip the bottoms off. Place them in a small glass dish and coat lightly with EVOO, sprinkle salt and pepper to taste. Put them in the oven on 400 for just a few minutes until they are bright green, tender but crispy.(maybe 7-8minutes?? it doesn't take long). Then when I pull them out, I sprinkle with balsamic vinegar. Yum!
Just got my box and I am so excited to eat the food. The strawberries look great and I ate one already.
if anyone who didn't get a box is interested, asparagas is $1.29/bunch at Lowes Foods. I picked some up last night and am going to just roast it in a pan with some evoo & sea salt....yum!
Yea!! Hopefully we can get enough folks. I cant remember how many she said, but I think it was like 15... so see if you can get any friends on board.
Don't you watch Rachael? No, not that Rachel, Rachael Ray! Extra Virgin Olive Oil. P.S. I picked my first few spears yesterday and roasted it with EVOO. Yumm!
