Saturday, June 2 is the annual Crawfish Day at the State Farmers Market in Raleigh. The State Farmers Market is conveniently located on I-40 and Lake Wheeler Road, exit 297. We plan to be there again this year to get our annual treat of good boiled crawfish in North Carolina. They will have both boiled and fresh for sale.

Try their crawfish boil The North Carolina Crawfish farmers will have recipes at the Farmers Market on Saturday. You can pick up a pamphlet (free) at the tent where the crawfish are being sold. These farmers are very helpful and will answer your questions. But try their crawfish boil while you are there. You can buy a pound and sit right down and eat them there. Be sure to suck the heads as this is where you get good spicy juices to go with the crawfish meat. This will be a good appetizer. It does not get any better.
Crawfish etouffee is good but crawfish boil is better. Eating crawfish etouffee you get the meat but you miss the delicious spicy juices when you suck the heads while eating crawfish boil. PS The pamphlet also indicates how to eat a crawfish. There is a special technique to eating crawfish boil to prevent eating shell.
Dang it! I wanted to go the Farmer's Market tomorrow for produce, but they will be packed! Guess I'll wait....I don't do crawfish...yuck!
