    Anyone have any good, minimal ingredient, somewhat healthy crock pot recipes? Preferably chicken. Child-friendly.

    I like this recipe, serve it over egg noodles or rice, its yummy!!

    Slow cooker Chicken with Mushroom Wine sauce
    Ingredients

    2 (10.75 ounce) can condensed cream of mushroom soup
    2 teaspoon dried minced onion
    2 teaspoon dried parsley
    1/4 teaspoon thyme
    1/2 cup white wine
    1/2 teaspoon garlic powder
    2 tablespoon milk
    2 (4 ounce) can mushroom pieces, drained
    salt and pepper to taste
    4 boneless, skinless chicken breast halves (fresh or thawed out)

    Directions

    (I browned the chicken breasts, both sides, in a little olive oil in a fry pan before putting in the slow cooker)

    In a slow cooker, mix together the soup, onion, parsley, wine, garlic powder, milk, and mushroom pieces. Season with salt and pepper. Place chicken in the slow cooker, covering with the soup mixture. Turn chicken every few hours and spoon sauce over them to keep moist.

    Cook on Low setting for 5 to 6 hours, or on High setting for 3 to 4 hours.

    I used a pinot grigio wine, and not much extra salt added because the cream of mushroom soup has a good amount in it. I cooked it for 6 hours on low, and then let it sit for an hour with the lid off and the sauce thickened up some, the chicken breasts were just fall-apart tender. I used nice thick boneless chicken breasts too.

    Cheesy Chicken

    * 6 skinless, boneless chicken breast halves
    * salt and pepper to taste
    * 1 teaspoon garlic powder
    * 1 (10.75 ounce) can condensed cream of chicken soup
    * 1 (10.75 ounce) can condensed cream of mushroom soup
    * 1 (11 ounce) can condensed cream of Cheddar cheese soup
    * 1 (8 ounce) container sour cream

    Directions

    1. Rinse chicken, and pat dry. Sprinkle with salt, pepper and garlic powder. Place in slow cooker.
    2. In a medium bowl, mix together cream of chicken soup, cream of mushroom soup and cream of Cheddar cheese soup.
    3. Cook on Low for 6 to 8 hours. Stir in sour cream just before serving.

    Kona Chicken

    * 2 (2 pound) broiler chickens, quartered
    * 1/2 cup chopped green onion
    * 1/2 cup soy sauce
    * 1/4 cup dry white wine
    * 1/2 cup water
    * 1/2 cup honey
    * ground black pepper to taste

    Directions

    1. Place chicken quarters into a slow cooker. Stir together the green onion, soy sauce, white wine, water, honey and pepper in a cup or small bowl. Pour over the chicken. Cover, and cook on high for 4 hours.

    Thanks guys. Dumb question-most recipes I see for crock pot chicken it says use frozen chicken. If not stated, should I assume that for all crock pot recipes?

    Interesting, I've always been told not to use frozen since it could possibly spoil as it thaws in the slow heat of the crock pot.

    Chicken Tortilla Soup

    * 4 whole Chicken Breasts, Cooked
    * 4 cans Cream Of Chicken Soup (10 Ounce Cans)
    * 1 can Rotel Tomatoes And Chiles (10 Ounce Can)
    * 2 cups Milk
    * 2 cups Half-and-half
    * 1 pound Mexican (or Regular) Velveeta
    * Tortilla Chips

    Cube the raw chicken into tiny pieces and then cook with taco seasoning to add a bit of kick. If you like it spicy add some cayenne pepper to chicken, and use the spicy Rotel.

    Mix all ingredients (except tortilla chips) together in crock pot and cook on low for 7-8 hours or high for 4-6 hours. Serve over tortilla chips.

    You can do frozen with no problem, and I didn't know that til recently. It just takes a little longer.

    Turkey breast out of the crock pot is out of this world. We don't fix it any other way now.

    you can use frozen or thawed meat of any kind. I have never had anything bad come out of the crock pot.

    That sounds yummy!!! I have four little ones and while two are seriously picky eaters, the other two would love this!!! A little caesar salad, the rice/egg noodles and some fresh bread out of my breadmaker and we are golden.

    I have a good crock pot Brunswick Stew recipe...fairly simple, not that many main ingredients. Will post tomorrow...have to clean up from my darling son's 16th birthday dinner and then I am off to bed! Started this morning with a quick stop at North Hills then Costco, Wally-world, a stop at Baskin-Robbins for ice-cream cake and I am POOPED!

    Found this on the net - HAVEN'T tried it yet but it sounded good at the time. Still have the ingredients for it. (raw chicken on low 4-6 hrs doesn't sound very long compared to some other recipes)

    Roasted Red Pepper Chicken Slow Cooker Recipe

    4 chicken breast halves, boneless & skin removed
    15 oz can black beans, drained
    12 oz jar roasted red peppers (with "juice")
    14 oz can Mexican stewed tomatoes
    1 large onion, chopped
    Salt & pepper (to taste)

    Place breasts in slow cooker. In bowl, combine beans, peppers, tomatoes, onion, salt & pepper, then pour over chicken. Cook on low 4-6 hours, ensuring chicken is cooked thoroughly.

    Serve over rice or pasta.

    Copied this out of a popular book from the library. Haven't tried it either.
    I got on a crock pot binge a while back and went to the library and checked out an armload of books. It was mostly soup recipes and a lot of stuff that didn' really sound that appealing. But there were a few I copied down. I haven't tried any of them yet.

    Jeans Pork Chops
    "Fix-it-and-forget-it"

    ½ cup flour
    1 Tbsp salt
    1½ tsp dry mus-My Friend
    ½ tsp garlic powder
    6-8 1" thick pork chops
    2 Tbsp oil
    15½ oz can chicken & rice soup

    Combine flour, salt, dry mus-My Friend and garlic powder. Dredge chops in mixture. Brown in oil in skillet. Transfer to slow cooker. Add soup. Cover. Cook on Low6-8 hours, or High 3½ hours.

    For variation: Step up the dry mus-My Friend to 1 Tbsp and add 1 tsp pepper.

    Smashed Potato Soup Crockpot
    prep 25 minutes
    cook 8-10 hours Low or 4-5 hours High
    8 servings

    3½ lbs potatoes, peeled and cut into ¾" cubes
    ?½ C sweet red or yellow pepper, chopped
    1½ t bottled roasted garlic
    ½ black pepper
    4½ chicken broth
    ½ C whipping cream, half & half, or light cream
    1 C shredded cheddar cheese
    ½ C thinly sliced green onion (4)


    In 4-6 qt slow cooker, combine potatoes, sweet pepper garlic and black pepper. Pour broth over all.

    Cover and cook on Low for 8-10 hours or High 4-5 hours.

    Mash slightly with potato masher. Stir in whipping cream, cheddar cheese and the ½ cup sliced green onion. Garnish with extras.

    Steak San Marcos crockpot


    2 lbs chuck steak - cut into cubes
    1 envelope onion soup mix
    1 29 oz can Italian style diced, peeled or crushed tomato's
    1 tsp oregano
    Freshly ground pepper & garlic powder to taste
    2 Tbsp. vegetable oil
    2 Tbsp. wine vinegar

    Layer meat evenly in bottom of slow cooker..
    Combine soup mix, tomatoes, spices, oil and vinegar in bowl. Blend with spoon. Pour over meat. Cover. Cook on High 6 hours, or Low 8-10 hours.

    Serve over rice, noodles or mashed potatoes.

    (this sounds something like what my grandma used to make, minus the carrots and crock pot - served over rice)

    Swiss Steak Crock Pot

    Ingredients

    1½-2 pounds of round or chuck steak,
    ¼ cup of all purpose flour,
    salt,
    pepper,
    1 pkg dry onion soup mix
    2 chopped carrots,
    1 tablespoon of Worcestershire sauce
    1 16 ounce can of tomatoes or 15 oz can tomato sauce


    Mix together the salt, pepper, and flour. Now, roll the steak in the flour mixture. Place the vegetables in the crock pot pour the Worcestershire sauce over the vegetables, lay the steaks on top. Mix the tomatoes, onion soup mix and pour onto the steaks and vegetables. Cook on low for around 8-10 hours.
