Easy Life Meals

    Does anyone know how long the website will be under construction for Easy Life Meals? I was really wanting to get in there next week to make some meals, and it's been down for a month or more now. Just wanted the prices/specials and the menus.

    Is that the place in Clayton? I thought they went out of business?

    They did go out of business a couple of months ago. Sorry :cry:

    Oh that stinks....I was wondering what was up with their website. I guess I will have to go to Raleigh or Cary. Better yet, I'll just have to keep cooking every night. Really I just wanted a better option for the 2 nights I have school every week.

    You've probably already thought of it, but I have been trying to cook "extra" on days when I've already got the kitchen tore apart. Sunday I made chili and pressure cooked a ton of chicken for chicken salad. The other week I made chicken soup and also had made some pinto beans. I didn't have to cook at all yesterday, and only dinner tonight. I still have plenty of chili for tomorrow as well.

    Yeah, I'm gonna have to work on that, because it's hard to get home from work at 4pm, and have dinner ready for the family and be at JCC, by 6pm. So any extra food prepared ahead will help. Thanks for the advice.

    I try to make a double batch when I am cooking a casserole, and freeze half for a meal later on. I usually take these out of the freezer the day before, and leave cooking instructions for whomever is home first. Hope this helps.

    I've tried a place in Raleigh called Entree Vous. It is in the shopping center across from Triangle Town Center. The food was really good. My picky kids ate it without complaining. I thought it was a little pricy, but I split the meals and then would bulk them up by cooking a little extra rice or pasta.

    I am going to start trying this. I have been freezing chili and any soups I make. These are things the babysitter can put on to heat up before DH gets home. She only sits with the kids for a couple of hours on Thursdays. Thanks for the suggestion.

    I really started using my pressure cooker lately. Got home at 6:30 and had chicken over noodles ready by 7!! Yesterday I made beeftips in it that were delicious and ready in 15 min!!! Or what about a crock pot that you can start in the am before work?

    I do use my crock pot quite a bit. I have been thinking of getting a pressure cooker, but I wasn't sure if it was worth the money. Lots of different reviews of it. I need to check out some recipes for the pressure cooker.

    You are welcome to borrow my pressure cooker and try it... it isnt fancy but it works! The big downfall I have noticed (and it could be because I am not a creative cook) is that it all ends up similiar. Soft meat in a gravy. LOL But my kids love it.
