Local Honey Ready

    Some of you were looking for Local Honey a few weeks back. We have completed our spring harvest. Our hives are off of Cornwallis road so it is real local Johnston Co. 40/42 honey.

    This may sound stupid....but I don't buy honey often...

    It is strained and smooth like it would be in the store, or does it still have the comb in it?

    We have it both ways. We also have some with more pollen left in it--that seems to be more helpful for people wanting to use it for allergies.

    What is the best way to keep it? We bought some locally about 2 weeks ago and when we wanted to use it, it had crystallized. I had it in a cupboard (dark, dry, cool place). Thanks in advance.:)

    We keep ours in our pantry/mudroom and have never had a problem. When we make creamed homey we add crystallized honey and keep it in a very cool dark place. I don't really know the answer for you other than to avoid extreme temps.

    Place your jar of honey in a bowl of WARM (slightly on the hotter side) water and the "crystallization" will turn back into smooth honey after a few mins of sitting in the jar/warm water! :)

    Oh and then after you use it of course put it back into a cool, dark place. Depending on the flower of the honey can create some crystals to start sooner than others too.

    As an aside, how is the bee population? Last year I heard news reports about there being a shortage of bees...............how are they doing now? My grandfather kept several hives when I was growing up, it's interesting to watch.

    Thanks! I'll try that...much better on homemade biscuits if it is smooth and not crunchy! :)

    It is $6.50 a pint--with or without comb
    I will make arrangements to meet you if you want some

    Sounds neat doesn't it, not sure I want to mess with the bee's though.
