received a e-mail from a friend. her family went to lone star last night. noticed the sanitation grade was a 90. since they know restaurants get 2 points for the education class they left. she checked wral web site to see what last 3 grades were. discounting the 2 points for education she said they were 88, 89 & 86.5. she said she was glad her family left last night. i don't understand why restaurants can't do better on health departments inspections. i personally believe it is a management problem. if i owned a restaurant the pay for my management staff would be tied to health inspection grades. i bet the grades would be good or i would have a large turnover in management staff. maybe some of you that are in the food service business can explain/comment. oh well, another johnston county restaurant to mark off our list until they clean up their act!!!!
lone star, chili's at white oak....heck, even the nearly brand new mcdonald's at brier creek can't seem to keep an A grade, either. these are big chain names, not little one off places. do the corporate offices not care about this? you'd think some manager heads would roll.....
These are usually a franchise rather than a corporate owned facility, which is why there is no immediate action, but there is probably concern and pressure from the corporate level, but aimed at the owner instead of the lower level managers.
understood that they are independantly owned, but they still represent the corporate brand since they have the name on the building....wonder what corporate policy is on how many bad sanitation grades you can get before they tell the owner to fire the manager or threaten them with losing the franchise. excrement does roll downhill as they say just thinking out loud. i bet if you wrote a letter to the corporate offices of these franchises that they'd send you some coupons for free meals
"i bet if you wrote a letter to the corporate offices of these franchises that they'd send you some coupons for free meals" actually i did write chili's about the garner store. never heard a word from my letter. i assumed they could care less. another reason I will not return. there are too many good restaurants that are concerned about their sanitation grades and do a good job of protecting their customers for us to patronize these bad apples.
We did for Wild Wings and they offered a free meal. We went back and got great service and paid for the meal with a follow up complimentary letter to the home office. We figured that accepting the free meal would have cheapened the complaint. That steak joint at White Oak was another matter, we did accept the meal because it was clear to on site management that we were neglected.
What were the deductions for? Remember that McDonald's over by WakeMed that received an "A" despite having maggots in the milkshake machine? Waffle Houses, for example, always seem to get nailed for having eggs out on the counter, even though they go through eggs so fast that they're not there for long. Managers are turned over if the restaurant is not profitable. Having a certain score does not guarantee profitability, and like it or not, they're not there for their health. They're there to make a living.
Most recent deductions: reach-in freezer in dry storage room had ice depositing onto packages of food. remove all ice from packages then move from underneath directline of ice forming., tea nozzles still need better general cleaning. dish machine buster heater was turned off., keep buster heater on while washing dishes. full cutting boards need to be resurfaced or replaced. air-dry all plates, and food containers before stacking., general cleaning of bottom of coolers; freezers and ovens are needed.
