Ok, here is my problem: MIL is getting married on 9/30 in VA. Since they made the plans so last minute they were unable to find a caterer available so she has asked all of us to pitch in and bring a couple of dishes. For some reason the family seems to think i am some great chef and always have high expectations from me. Now what i have to figure out is what to make that will be able to be prepared down here, carried to VA, and not reheated. She looking for some type of finger desert and some type of appetizer. Any of you great cooks out there have a tried and true recipe or any suggestions?
No recipes that I can think of... but if it were me.. for the dessert, I would go over to the new bakery behind Smithfield BBQ and talk to the baker about making you up a couple of nice trays of pastries, it would give you a variety, save time for you to bake your other dishes and everything I've tried from there has been wonderful so far!
So I take it you are looking for someting COLD since you are traveling with it and need to just be able to pull it out and it be ready to serve? Something wicked easy and yummy, ham rollups. All you have to do is get a pound or more of deli ham (depending on how much you want to make), and some cream cheese. Take a slice of deli ham, spread some cream cheese on one end, roll it up, and cut it into bite sized pieces. Store them in a Tupperware containter and put them on a platter when you get there. Sometimes I have used tootpicks so people don't have to use their fingers, depends on how fancy you wanna be. LOL

For the ham rollups, they are reallllllly good with a pickle in the middle too. I use any kind of ham, the whipped cream cheese, and kosher dill pickle spears. Man they are good. Of course, it could be a pregnant thing......who knows? LOL
Yep, add the jap! Can you not make something there rather than transport it? Might be much easier all around.
i wish but the wedding is at 4pm and we aren't going up until Sat am. Going in this weekend for all the pre-wedding stuff.
Stuffed 'Shrooms (recipe uses 20) Melt 3 T butter, add 1/4 c chopped stems, 2 T onion, 2 T red peppers and cook till tender. Stir in 14 crushed Ritz crackers, 2 T parm cheese and 1/2 t Italian seasoning. Spoon into clean 'shroom caps and bake at 400 for about 15 mins. You could bake 'em here and tote 'em there w/o incident I would think. Recipe came from Kraft. kraftfoods.com - has tons of quick and simple ideas!
Adding something to give it a little kick sounds good girls! le, I agree about Kraft's website. I've found some awesome recipes there. I get their magazine in the mail, and recently tried a meatloaf recipe from it. OMG was it good! Best meatloaf I've ever made, family LOVED it! Usually I tend to eat more of the veggies and taters when we have meatloaf, but not that time! LOL
curious, was it the new mag that used the stuffing mix in the loaf? i am looking fwd to the chicken bruschetta recipe one night soon!
How about something that can be thrown in the crock pot? Those lil' smokies or frozen meatballs can be thrown in with a bottle bbq sauce and jar of grape jelly. They are EZ and always go over good at the places I prepare them for. Also, how about a quick, EZ cheeseball with crackers? Veggie trays? Fruit trays? I also recall seeing a recipe for mini ham sandwiches using those little pull-apart rolls with spicy mus-My Friend and maybe a small piece of cheese.
I make a nice simple 2 lb. meatloaf that usually gets half eaten in one sitting (and there are just 2 of us eating it) Craig

my mom makes a million dollar pie. It has pineapple, pecans, cool whip and eagle brand milk with a graham cracker crust. If you want the recipe let me know and I can post it tomorrow
Oh my goodness, I know someone who makes these little pecan bars that are TO DIE for. The recipe is something like Club crackers with chopped pecans on top and then covered with melted toffee, or something like that. Anyway, after you cook them and they cool, you break them up into bite size pieces and store them in a tin. They are SO GOOD, and they'd be very easy to transport. Let me know if you need a good dessert finger food and I'll see if I can get the recipe for ya.
