Boneless Prime Rib - Help!

    So...I decided to cook hubby and I prime rib for Christmas Eve dinner. I bought a small boneless prime rib...it's just under 3 pounds. We like it rare to medium rare. Now, I need to know the best way to cook the thing! I'm a decent cook but have never tried my hand at this before. Thanks, in advance! :) Btw, Merry Christmas! I'm trying to get out of my "bah humbug" mood!

    Odd that you should ask as this is a topic on another board I read and here is a recipe that seveal peopple have used over the years and all of them love it.

    BBG's Granny's Easy Peasy Delicious Recipe:


    Roast Beef Rx - 3 to 10 lbs.

    1. imbed garlic slices into roast
    2. Salt + Pepper the outside liberally; or use garlic salt
    3. preheat oven to 375 degress for 10 minutes
    4. cook roast for 45 minutes (do it in the morning)
    5. Turn oven off BUT DO NOT OPEN THE OVEN DOOR
    6. Let it alone until you're almost ready for dinner.
    7. About an hour before you're ready to eat - reheat oven to 375 degress for another 45 minutes before dinner
    8. The 45 minutes starts from the time you turn the oven "on"....no preheating. Turn off the oven after 45 minutes.
    9. Take roast out of oven to cool for about 15 minutes to 30 minutes.
    10. Slice and eat... should be medium rare and more rare in the center of roast


    No "math" involved...it just works...don't ask me how.

    coat with olive oil and season with Mccormicks Montreal seasoning.
    heat oven to 450
    put meat in oven for 15 min to sear the beef
    lower oven to 275 or 300
    cook till 120 degrees thats rare
    under 3 lbs is kinda small it should cook fast.
    This works for me while cooking 14lbs and up

    I mixed garlic, horseradish sauce, and cracked pepper together and coated the outside of the rib roast and then baked.
