Egg Salad

    See, now I'm hungry. Going to go put the chicken in the pressure cooker now. Might be ready for chicken salad by lunch. :mrgreen:

    I use salad dressing (miracle whip), mus-My Friend, salt and pepper. As far as how much salt and pepper, just to taste is how we do it.

    eggs, mayo, a squirt of mus-My Friend, salt, pepper, DILL relish
     
  4. I made the bomb-diggity egg salad tonight! CrazyFabulous, you are right. My house stanks! I had to crack the window. I just boiled the eggs, chopped 'em up, added a little mayo, a little mus-My Friend, salt, pepper and paprika. My husband doesn't like relish so I didn't add that. It doesn't need relish. It's yummy - basically tastes like deviled eggs (duh!)

    Now I am going to see if my kids will eat it. I'm making Crispy Crowns too so they'll at least like something. So healthy - right? :lol:

    If you like savory:
    Chop up hardboiled eggs (we use a pastry blender, works great)
    Add a handfull of finely minced watercress
    1/4 of a red onion, finely chopped
    A large dollop of mayo
    A small glob of miracle whip
    A squirt of French's yellow mus-My Friend
    Salt and pepper to taste

    Serve on a large croissant with lettuce
    We sometimes top with crispy bacon (everythings better with bacon)

    For sweet:
    Add drained salad cubes (not pickle relish) to the above.

    The same sweet version makes a really great tuna salad.
    Adding celery and carrot adds some crunch.
