In spite of all the horror stories, cooking a turkey is fairly simple, whether you roast it, fry it, grill it, or whatever else. There are dozens, if not hundreds, of instructions (I won't call them recipes) for how to cook a turkey available at the Food Network website. Take any and follow the instructions, and you'll have a moist tasty turkey you can proudly claim youcooked yourself. There are a few hints, though... 1. Dressing yes, Stuffing no - Don't stuff the turkey. Stuffing leads to dryness. Certainly you can make dressing, just cook it outside of the turkey 2. Brining is better than basting - Actually most professional chefs don't baste at all. 3. Ignore the little pop-out gizmo that comes with most turkeys (if you're not frying, go ahead and leave it in place). Better to get a probe thermometer and place it in the thickest part of the breast. Look for a temperature of 161°. The web is full of other helpful hints, and I'm sure others here will be more than happy to tell you their own hints (and tell you why mine are wrong).
