Yippee, I found the recipe online. They're called Coated Crackers and the recipe couldn't be easier! Here you go... (You do know that "oleo" is the old term for margarine, right? ) http://www.cdkitchen.com/recipes/recs/1748/Coated-Crackers81906.shtml
I had never heard that term before, so (years ago) when my mother-in-law gave me one of her recipes and I saw "oleo" I had to ask what it was. Hey, I'm only 39 now... and I was probably in my 20s back then. Anyway, those crackers are SOOOOOOOOOOO good! I didn't realize that you broke the crackers apart before baking them. But thinking more about it, I'm remembering that they are simply broken apart instead of into pieces.
I have an aunt who came up with a similar recipe, and she drizzles melted semi-sweet chocolate over the top before she lets them cool and won first prize a local cook-off with them. Talk about good!
Well i'm 47 and my mom taught me that a long time ago when she was teaching me how to bake, a lot of the old family recipes she used when i was a kid called for oleo
That sounds really good! And I happen to have some leftover cream cheese from when we were bad and had to give Big Steve's bagels a try.
I'm always surprised by that. My understanding (possibly incorrect) is that margarine was a WWI invention to deal with a shortage of butter. My parents remembered buying it white, and it came with a little tube of coloring to make it yellow.
I don't remember that.. but I do remember my grandmother and grandfather reffering to it as oleo when I was little.
Even if one is not a low-carb dieter, this one will make a KILLER appetizer. I eat it cold sometimes for breakfast. The only bad thing is that people may be scared of spinach! For an appetizer, you could just cut it into small pieces. Soften 4 oz. cream cheese in a mixing bowl. Combine with 1/3 cup heavy cream. Add and combine with 3 eggs. Pour that into a 13 by 9 inch baking dish that has been sprayed with Pam. Bake in a preheated, 375 degree oven for 12-15 minutes, until you start to see a touch of brown at the edges. Let cool for 10 minutes while you set the oven to 350. Top the "crust" you just baked, evenly, with (in order) crumbled spinach (a 16 ounce bag which has been thawed and squeezed to remove as much moisture as possible), a very generous sprinkling of garlic powder, some black pepper, six slices of GOOD American cheese (Land O Lakes, Boar's Head, Dietz & Watson), sixteen ounces of shredded Mozzarella, salt, black pepper, and a VERY generous sprinkling of rosemary. Bake for 30 minutes, or until done.
Something very simple: Buy a veggie tray, or make one, for dip mix up some cream cheese and fresh basil and garlic.. or just buy some different types of cheese, and a salami roll, cut it all up and serve with crackers.. For dessert: cut up some fresh fruit ( I usualy use strawberries), mix with brown sugar, mix in some type of nuts (I usualy use pecans or walnuts) put it in a caserole dish, layer of DRY pancake batter, pour melted butter on top, bake for about half hour on 350, yummy in deed.. check out allrecipes.com
