Have you tried the wings from that grocery store (Food Town, I think) over in Clayton where 42 meets Main St.? If not, I'd do so. Fresh wings, not frozen, so you don't get that black crap all over the bones like the ones from FL. Personally, I like McKinley's. Go on Sunday night when they're 25 cents. You can also order your wings naked at Hooter's.... no breading, just sauce. If you're in Chapel Hill, try the really, really hot ones at the Carolina Brewery. I think they use chipotles in adobo sauce in the recipe, which gives them a different flavor. At home, I make them with a 50/50 mix of Frank's Red Hot sauce and butter, NOT!!! margarine. Melt the butter and mix with the Frank's. The trick is not to have it too hot or the sauce will separate. I fry the wings for about ten minutes with nothing on them but the skin.
